Cookies cookies and more cookies!

Last weekend we continued our annual Christmas cookie baking day at mom's house.  I have attached a few photos of this years cookies as well as my favorite recipe! 





ORANGE DROP COOKIE

Ingredients

  • 2/3 cup shortening
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 cup orange juice
  • 1 teaspoon orange zest
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  •  
  • 2 cups confectioners' sugar
  • 2 tablespoons butter
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest


Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. Mix together flour, baking powder, baking soda and salt. Stir 1/2 cup orange juice and 1 teaspoon rind into the flour mixture.
  3. Cream shortening and white sugar together. Mix egg into the sugar mixture thoroughly. Slowly blend flour mixture into the egg and sugar mixture. Drop by teaspoonful onto greased cookie sheet.
  4. Bake for 8 to 10 minutes.
  5. Make the icing: Mix confectioner's sugar and 2 tablespoons butter together until smooth. Pour 2 tablespoons orange juice and 1 teaspoon orange rind into the sugar and butter mixture, mix well. When the cookies have cooled spread the icing generously over the tops of the cookies.

Back to Reality

I have been meaning to update our blog for the first time long before now.  Mike and I have had a busy few weeks to say the least!  We had a wonderful time at our wedding and were blessed with wonderful weather- thank you to those who shared our special day with us. Pictures are coming soon!


Immediately after our wedding we were able to take our honeymoon to San Francisco.  Besides the cold weather and gusty winds we had a blast.  I posted a few photos of us in San Francisco, Napa and Sausalito!


Saturday after the wedding week my grandma suffered a massive heart attack and was at Mercy Hospital in the ICU for several days.  She is doing better and was able to come home Thursday.   Good thing she knows a nurse to take care of her :)  We are so lucky to have great people in our lives, we appreciate the many thoughts and prayers.
